- 2 tbs. vegetable oil
- 1 cup chopped onion
- 1 cup chopped red bell pepper
- 1 cup frozen whole kernel corn
- 2 cloves garlic, minced
- 1- 14.5 oz. can diced tomatoes
- 2 cups chopped cooked chicken
- 1 1/2 tsp. Creole seasoning
- 1- 32 oz. carton chicken broth
- sour cream, chopped fresh cilantro, optional
Top with sour cream and cilantro, if desired.
Serves: 6-8
