Creole Chicken Soup

Ingredients:
  • 2 tbs. vegetable oil
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 1 cup frozen whole kernel corn
  • 2 cloves garlic, minced
  • 1- 14.5 oz. can diced tomatoes
  • 2 cups chopped cooked chicken
  • 1 1/2 tsp. Creole seasoning
  • 1- 32 oz. carton chicken broth
  • sour cream, chopped fresh cilantro, optional
In a Dutch oven, heat oil over medium-high heat. Add onion, bell pepper, corn, and garlic, and saute' until tender. Stir in tomatoes and chicken. Sprinkle with seasoning, and saute' 2 minutes. Add chicken broth. Bring to a boil. Reduce heat, and simmer 20 minutes.
Top with sour cream and cilantro, if desired.

Serves: 6-8
