One-Pan Chicken Bacon Cheddar Pasta

Ingredients

  • 1 lb bacon, chopped
  • ½ onion, diced
  • 1½ lbs chicken, cut into small bite-size cubes
  • Chicken seasoning, to taste
  • Steakhouse seasoning, to taste
  • 3 Tbsp cornstarch
  • 1 carton low-sodium chicken broth
  • 1 lb pasta (we used protein pasta)
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Cook the bacon and onion.
In a large skillet over medium heat, cook the chopped bacon. When the bacon is about ¾ of the way cooked, add the diced onion. Continue cooking until the onion is translucent and the bacon is crispy. Remove the bacon and onion and drain on paper towels, leaving the bacon grease in the skillet.
  2. Cook the chicken.
Cut the chicken into small bite-size pieces. Season to taste with chicken seasoning and steakhouse seasoning. Add the cornstarch and toss until the chicken is evenly coated.
Add the chicken to the skillet with the bacon grease. Cook over medium-high heat for about 3 minutes on each side, then toss/stir for another 30 seconds or so. Remove the chicken from the skillet.
  3. Cook the pasta.
Add the chicken broth and pasta to the same skillet. Increase the heat to high. Once boiling, cook for about 8 minutes, or until the liquid is absorbed and the pasta is cooked through.
  4. Make the cheese sauce.
Reduce the heat to low and add the heavy cream. Stir, then add
1 cup of shredded cheddar cheese and stir until melted. Add the remaining 1 cup of cheddar cheese and stir until completely melted.
  5. Combine everything.
Add the cooked bacon, onion, and chicken back to the skillet. Toss everything together until well combined.
